Fresh Tomato Salsa

Ingredients

  • 1 jalapeño stemmed and seeded
  • 4 cups tomatoes halved (on sale Vine Ripe Tomatoes Locally Grown $1.09 lb)
  • 1/2 white onion quartered
  • 1/2 tbsp. vegetable oil
  • 2 cloves garlic
  • 1/2 lime juiced
  • 1/2 cup cilantro leaves stems discarded
  • 1/4 tsp. cumin
  • 1 tsp. salt
  • 1 tsp. Black pepper

Instructions

  1. Preheat oven to 400°. On a large baking sheet, toss jalapeño and onion with oil. Roast until browned and slightly charred, 15 minutes. Let cool.
